Professor Jeffrey Cohen, PhD Candidate Andrew Mitchel and undergraduate senior Michael Doulas will be talking about entomophagy, the consumption of chapulin (grasshoppers) in the southern Mexican state of Oaxaca, and about their research conducted in Summer 2022 concerning whether the selling of this regional delicacy should be considered a viable economic niche.
