Dr. Jeff Cohen featured in Ohio State Alumni Magazine
Dr. Jeff Cohen's book Eating Grasshoppers was recently featured in Ohio State's Alumni Magazine. In his book, Dr. Cohen tells the history of chalupines which are a regional delicacy in the state of Oaxaca, Mexico and recounts that chalupines provide important nutrition as well as entrepreneurial opportunities for the residents of Oxaca. Dr. Cohen has conducted research extensively in the area and grew interested in the grasshoppers and how they contribute to the nutrition and economy of the region. The article goes on to detail how the grasshoppers compare nutritionally to other commonly eaten protein sources.
